Why We're Hitting the Road: BBB Maastricht

This month, our team is packing up samples, prototypes and a lot of curiosity, and heading to the BBB Beurs in Maastricht — one of the most important hospitality trade shows in our region. It is where chefs, bar managers, QSR operators and facility buyers gather to compare notes on what is actually working on the floor. For us, it is also where product development quietly accelerates.

Events are where the real brief gets written

Over the past weeks we have been preparing for a season of travel — trade fairs, partner visits across Europe, and lab tours with customers in catering, festivals and leisure. The pattern is always the same: someone pulls a straw out of a glass, points at a small detail, and says, "what if it did this instead?"

That is how our current wheat-straw pellet programme has been evolving. Operators don't ask for "a more sustainable material" in the abstract — they ask for a straw that stays rigid through a long cocktail service, a fork that cleanly cuts through a warm pastry, a spoon that doesn't go soft in a hot bisque. Each of those requests ends up as a tweak in our pellet recipe or a change in our tooling.

Bending edge, cutting edge

Two product directions we are actively sparring about with partners this cycle:

  • Straws with a bending edge — a flexible section that gives guests the comfort of a classic bendy straw, without the plastic. For hospitals, kids' menus, long-haul catering and poolside service, this is a surprisingly big deal. Getting the bend right in a biobased material is a genuine materials-science puzzle, and one we are working through pellet iteration after pellet iteration.
  • Cutlery with a sharper cutting edge — a knife that actually cuts. It sounds obvious, but anyone who has tried to slice through a slightly chewy piece of chicken with a limp compostable knife knows the problem. We are iterating on wheat-straw and bagasse blends that hold a cleaner edge, without compromising on compostability or food-contact safety.

Neither of these are marketing claims yet — they are works in progress, and that is exactly why trade shows matter. We bring the prototypes, operators push back honestly, and we go home with a sharper brief.

Why we show up in person

Our supply chain has grown a lot this years, with partners in Spain, Vietnam and China scaling up production as European demand for biobased single-use tableware keeps climbing. But the brief for what we make there is still written in Europe — in hotel bars, festival back-of-house, QSR kitchens and catering vans. The BBB floor is one of the few places where all of those worlds sit in the same hall for three days.

As we wrote earlier in 3 Tactile Details That Elevate the Guest Experience, the small objects in a guest's hand carry a lot more weight than they get credit for. Events like BBB are where we test whether we are actually earning that weight — or just assuming we are.
